Make Your Own Kimchi Class
Our class is designed to educate the benefits and techniques of making Kimchi on your own.Kimchi is a traditional Korean fermented vegetable dish that has been loved by generations for its crunchy texture, bold flavors, and endless variety. Kimchi is also gaining popularity for its reputation as a living superfood and is an excellent source of probiotics and raw nutrients. Ellen White, founder of Ellen’s Kimchi, is a Korean native who first learned how to make Kimchi from her grandmother as a young child living in Seoul. More than a simple cooking demonstration, Ellen’s two-hour interactive workshop is a guided, hands-on experience where students make and decorate their own 16 oz. jars of Kimchi to bring home and enjoy after class. Ellen will share her knowledge about the cultural traditions of Kimchi making and the benefits of the serving this healthy dish at home. She will also showcase places where you can locate seasonal ingredients, popular recipe variations, and timesaving tips. Students will chop, blend, spice, and create their own handmade jar of Kimchi made to personal taste. You will learn how to naturally ferment your Kimchi at room temperature, best storing techniques, and the optimal time to open and enjoy your handmade superfood. Fortunately there's no rush to finish it off, because like wine and cheese, Kimchi's flavor only deepens with age.

Frequently Asked Questions
 
I opened the jar and it was bubbling. Is it bad? It leaked, is it not sealed? Why fizzy?
Natural fermentation process makes vegetables to expand and makes its juice bubbly like soda pop. It's exciting to have bubbles because it makes the Kimchi sour, tangy and effervescent which helps with appetite and digestion. Usually Kimchi bubbles after about 1 to 2 days in room temperature (3 to 5 days in colder climate) and you store the rest of its life in fridge to slow down its fermentation. Contents expands and creates carbonation which may make your jar leak. Ellen's Kimchi has a napkin wrapped to absorb leak and odor. Keep it refrigerated after its initial fermentation in room temperature for its crunchy and refreshing bursts of exquisite flavors.
How long is it good for?
Unlike some other fermented foods, Kimchi in not likely to develop mold. The combination of Ginger, Garlic, Green Onion and Salt eats up unpleasant microbes. Hence, it does not expire. We find it most flavorful when it's been stored in refrigerator for over 3 weeks. The probiotics, primarily lactic acid bacteria, appear most prominent when it's matured to a fully developed fermentation stage. Kimchi is like wine and cheese; it gets tastier as it ages. Summer Kimchi is good in any stage of its life, it just doesn't last long as we gobble it with cold noodles. 
Do you have to keep it refrigerated?
Yes, after the initial fermentation in room temperature, keep the jar in your fridge at all time. Keeping it cold at 40F degree slows the fermentation and raw Kimchi tastes best when it's cold and refreshing.  
How long do you ferment in room temperature before you put it in refrigerator?
Just 1 day during summer and 5 days during winter; it's ideal to ferment for 3 days in a very cool spot of your kitchen at 65F degree. 
Do you bury your Kimchi in your backyard?
No, not in California. A crock called Hang-ah-ree 항아리 was buried in backyard normally during Kimjang Season 김장 (Kimchi making tradition in cold mid-November every year) before refrigerator was introduced to Korea. During brutal winters in Korea, these crocks buried in the ground would keep Kimchi from freezing outdoor. My grandmother's well preserved Kimchi that has been under ground in a crockpot in the middle of winter for few months tasted out of this world.

Ellen's Kimchi is handmade in small batches which is why it is so labor intensive to make individual jars. We are striving for excellence in packaging, not just for the content. Please see our vendor's document on our jar caps written for environmentally conscience consumers.

Kimchi Workshop
with family, friends and more...
 
Kimchi is not just delicious and healthy, it also brings people together. My favorite food journalist, Michael Pollan (NPR Podcast), discusses the importance of making food with your family, especially with children. Traditional Korean families get together around mid November to make kimchi all day. We call it KimJang (김장). It is a traditional winter food preparation event. Everyone participates in making and storing Kimchi in clay pots (항아리) buried 3 feet under ground in the back yard (instead of fridge) so it would last a family throughout a long winter. I have fond memory of the day when everyone ate well and laughed a lot. My grandmother used to make the most amazing kimchi that was the talk of the town for its well preserved freshness and crunchiness. Now you can spread this fermentation bliss with your loved ones.
